Hello again all my fellow foodies! Here’s a little anecdote for you. Today I bought a slice of the most gorgeous carrot cake with some delicious buttercream frosting. I recall thinking, “Wow, this frosting needs finer sugar!” Okay, to be fair it was great, but I think all the foodies deserve better. So here is my take on classic buttercream frosting:
Serves 1 medium cake of 12 cupcakes.
- 140g softened butter
- 280g icing sugar.
- few drops of food colouring (optional).
Cream the butter in a bowl until it is soft. Add half of the icing sugar and cream until you get a smooth texture.
Mix in the remaining icing sugar and a tablespoon of milk and mix the frosting until creamy and smooth. Beat in the rest of the milk if you need to loosen the mix.
Stir in any desired food colouring or just leave the frosting plain.
